Get Your Carb On

Some hot spots for getting that carb fix in NYC....

S'MAC in the East Village
Jim and I stopped in on President's Day this past Monday and
enjoyed the Cajun mac and Cheese - warm, yum, and big.
We had left overs but it's always fun to share!

 We had seen a show on foodnetwork and this place was featured - had to try!
I went with their most famous sauce (sweet mango chutney mayo)
 but couldn't resist tasting a few others.  You can get the sauces in sets of three
 or even have them dump the sauce right on the frites!

 Not known for their fries, but they have good ones non the less.  
Papas Fritas loco - chili dusted fries with pickled red onion.

Basil Bruschetta


Ingredients

6 roma (plum) tomatoes, chopped

1/2 cup sun-dried tomatoes, packed in oil

3 cloves minced garlic

1/4 cup olive oil

2 tablespoons balsamic vinegar

1/4 cup fresh basil, stems removed

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 French baguette

2 cups shredded mozzarella cheese

Directions

Preheat the oven on broiler setting.

In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.

Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.

Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.

Broil for 5 minutes, or until the cheese is melted.

Little Girl In A Big World

 
My cousin who is like one of my sisters is on a big adventure right now.  Taking advantage of some of those wonderful opportunities as students she is studying abroad in Scotland.  I remember when I studied in England - LOVED it!  Hope she enjoys her experience as much as I loved mine.  I'm looking forward to keeping up with her photos and stories on her blog.  We didn't have blogs back when Jim and I studied abroad.
